Abstract

Scientific research in the field of refrigeration technology of meat and meat products. conducted at VNIHI almost from the moment of its foundation, are aimed at studying the theoretical and practical aspects of the influence of low temperatures on the change in the quality of raw materials and finished products, increasing the nutritional and biological value and environmental safety of food products.
